Forage Farm Shop and Kitchen
Forage Farm Shop and Kitchen is situated on Penllyn Estate Farm, just off the A48 near Cowbridge. It offers customers the opportunity to buy high quality, seasonal food with an emphasis on Welsh produce.
Much of it originates from the Estate itself, with a broad range of carefully selected local and UK producers also supplying goods to the shop and restaurant. The mission is to provide fresh, delicious produce in a beautiful, newly constructed setting.
Manager Damien Burnell’s favourite recipe made at Forage Farm Shop is Beetroot, Butternut squash and goats cheese burgers. Chloe had a go at making these and can confirm they are absolutely delicious, a great alternative to an original meat burger. Forage’s beetroot, butternut squash and goats cheese burger
Ingredients:
2 raw beetroots, peeled and grated
1 butternut squash (or large sweet potato)
2 cloves of garlic, crushed
1 red onion, finely diced
1 egg yolk
3tbsp fresh rosemary and thyme, chopped
500g goats’ cheese
Method:
Cut the butternut squash in half and bake in the oven until soft. Sweat the onions in a pan, add garlic and grated beetroot and cook until soft. Mix together with the soft flesh of the butternut squash, egg yolk and goats’ cheese. Season with salt and pepper and make into 6oz patties. Chill for at least an hour in the fridge before grilling until golden on each side.
