Tuna Pasta Bake
Ingredients:
300g of dried pasta
1 onion
2 cloves of garlic
1 tablespoon of vegetable oil
½ – 1 teaspoon of chilli powder
1 teaspoon of dried mixed herbs or Italian herbs
1 x 400g tin of chopped tomatoes
1 x 200g tin of sweetcorn
1 x 185g tin of tuna (in spring water), drained
Black pepper to taste
2 slices of stale or toasted bread
50g of low fat cheese
Method:
- Pre-heat the oven to 200oC / Gas mark 6
- Bring a large saucepan of water to the boil. Add the pasta and cook as per packet instructions (usually 10-12 minutes)
- In the meantime, chop the onion and crush/chop the garlic
- Heat the oil in a saucepan and cook the onion and garlic for 3 minutes. Add the chilli powder and herbs and cook for a few minutes more
- Add the chopped tomatoes, sweetcorn and ½ teaspoon of the black pepper (or more if you prefer), bring to the boil and then reduce to simmer.
- Grate the stale / toasted bread and cheese and mix together in a bowl
- In another bowl, flake the tuna and then add to saucepan
- Once the pasta is cooked, drain it and combine with the cooked tomato sauce
- Pour the tomato and pasta mixture into an oven proof dish and top with the breadcrumb and cheese mix
- Cook in the pre-heated oven for 30 minutes, until golden brown
- Serve with a side salad
