Pesto Pasta
Ingredients:
150g pasta (any type you like)
60g grated low fat cheese (optional)
1 x 190g jar green pesto
160g cooked chicken / cooked ham
Method:
- Bring a pan of water to the boil and add the pasta. Cook per the packet instructions (usually 10-12 minutes)
- Grate the cheese and leave to one side
- Pour half the jar of the pesto into a saucepan and add the cooked chicken or ham
- Heat the pesto and meat over a medium heat until it starts to bubble.
- Reduce the heat and let simmer for 5 minutes – stirring from time to time. Add a little water if it starts to stick to the saucepan
- Once the pasta is cooked, drain it and add to the saucepan with the pesto
- Increase the heat and mix the ingredients together
* You can put the half full jar of pesto in the fridge to make the recipe again later in the week

Food Vale joined 90+ local food leaders and MPs in Parliament to call on better Government investment in healthy and sustainable food. ‘Investing in a better food future’ event on 14 June showcased the innovative role of food partnerships in improving local economy and community health.
