Muffin Pizzas
Ingredients:
100g cheese
½ red onion
1 orange or green pepper
1 small 200g tin sweetcorn
Handful of mushrooms
100g cooked ham
4 English muffins
8 tablespoons of tomato puree
Method:
- Pre-heat the oven to 180oC / Gas mark 4
- Grate the cheese
- Peel and dice the red onion
- Wash the pepper and mushrooms. Chop the pepper and slice the mushrooms
- Drain the sweetcorn and scoop out into a bowl
- Dice the ham
- Cut the muffins in half, width-way, and spread a tablespoon of tomato puree on the inside of each half
- Sprinkle with some cheese and add the toppings of your choice
- Repeat with the remaining muffins
* Any leftover ingredients or muffin pizzas can be kept in the fridge to eat for up to 2 days later.
* This is a great recipe to use up leftover food
* You can use other vegetables or fruit such as carrot, spring onions, pineapple, etc
* You can also use other protein foods like cooked chicken, tuna or cooked turkey instead of ham
* Use vegan mozzarella instead of cheese to make this vegan friendly. Vegan mozzarella melts better than vegan cheese. Instead of protein from animal sources (like chicken), try diced tofu as an alternative

Food Vale joined 90+ local food leaders and MPs in Parliament to call on better Government investment in healthy and sustainable food. ‘Investing in a better food future’ event on 14 June showcased the innovative role of food partnerships in improving local economy and community health.
